Can you believe that we are already in chapter 8 of 12? Time sure flies when you are living a life you love. <3
Summer can be one craziest times of year considering there is always so much to do within such a short period of time. However, it is so important to enjoy all that is has to offer, do “all of the things,” and embrace the craziness. See your friends. Take the trip. Relax all day. And do things that make you happy. Life will always be busy, and there will always be things to do, but if we change how we are viewing that “busyness,” our happiness will drastically shift.
And today, I stepped back from the craziness and the “go-go-go” mentality to do something that I love (baking). PSA – it is okay to say “no” and do something for yourself once in awhile. Actually, it is necessary. It is so important to see your friends, take the trip, and make the memories, but it is equally important to take care of yourself, have some personal time, and do something for you.
With that said, if you know me at least a little bit, you would know that I love to experiment in the kitchen making clean and tasty treats, and this recipe turned out pretty great if I do say so myself. And, I feel that this recipe is the perfect treat for the health junkie that wants to follow their macros, yet still feel full of sugary-satisfaction of a nice sweet treat.
Here is the recipe, nutrition profile, and directions to my 10 ingredient Dark Chocolate Coconut Granola Bars, enjoy! <3
2 cups of all natural, rolled oats
1 tablespoon of chia seeds
4 tablespoons of unsweetened raisins
2 tablespoons of unsweetened, organic coconut flakes
1 tablespoon of organic cane sugar
1 tablespoon of light, organic brown sugar
1 teaspoon of cinnamon
1 cup of natural Skippy peanut butter
5 tablespoons of Trader Joe’s organic honey
¼ cup of unsweetened vanilla almond milk
54% cacao dark chocolate
- Mix together all of your dry ingredients (oats, chia seeds, raisins, coconut, cane sugar, brown sugar, cinnamon).
- Heat up wet ingredients (peanut butter, honey, and milk) until boiling. Quickly remove from heat.
- Pour wet mixture over the dry mixture. Mix until evenly distributed.
- Pour batter into a 9×13 pan and evenly pat down the batter.
- Add dark chocolate chips on top and extra raisins/coconut if desired.
- Place in freezer for 2 hours. Enjoy!
Some things to think about is that there are SO many options for this recipe. Truly, you could take out the cane sugar, I just like my treats a little bit more sweet. 🙂 You could also add in nuts, take away the coconut flakes, add more dried fruit, take away the chia seeds, the list is truly endless! As long as you have the peanut butter and honey mixture you can make any granola that you would want and I am sure it will be tasty. Make this your recipe, so you enjoy every. single. bite.
